Not sure if it is the right place to ask, but… does this new features means I can use Documents folder to store data that is not generated by the user, instead of the temp or cache folders ?
Will Apple be happy with that ?

They are still picky as to what they allow to be stored in there. Things like settings data files, level data files should all be fine.
