I’m sure it’s really nothing to be concerned about.
But I’ll ask anyway.
I purchased the Pro, earlier this month, and I see the option to purchase the Pro in the Store, Emails, and sometimes in random web pages on the Corona site.
Do I just ignore those reminders? Or have I possibly missed a step somewhere, and I really don’t have Pro?

You haven’t skipped a step and you really do have pro - there are “ads” for getting a license around the site we all see and in newsletters as well - nothing to be concerned about 
You may also occasionally have the website tell you that you cannot view a page and that you need to subscribe - if you do see that, ignore it. It’s rare to see it but when you do it’s a minor hiccup with the permissions of the page and nothing at all to do with your own account.
