The same way you uninstall anything on a mac- just download the app folder.
There are a few files that keep track if you are in trial, etc. You dont really need to delete them unless you are trying to use the trial again. But if you just want everything off for the sake of it being off, I think they are under /Library somewhere.

jtal is correct, to uninstall Corona you would just need to drag /Applications/Corona to the Trash and empty it. There are a couple of preference files you can also delete:
~/Library/com.anscamobile.ratatouille.plist
-/Library/com.anscamobile.Corona_Simulator.plist
Lastly, you can delete the application support folder where the simulator saves the “sandbox” folder for each application:
~/Library/Application Support/Corona Simulator
