Corona Simulator doesn't have build options for devices

I was following the instructions on this page:

and successfully created my Ad-Hoc and App Store provisioning profiles (which I had done before I had Corona, so it wasn’t too bad).

However, when I launch Corona SImulator (Version 2011.484 (2011.4.12)), I don’t even have a “File->Open for Build” menu option, nor does the Welcome Window have those options. I have “File->Build->iOS and Android” options, but both are grayed out.
