I’m using some images from opengameart.org and they’ve got that pink background denoting transparency (see attachment). How can I make that pink transparent using Corona?

Your best bet is to use an image editing software package like Adobe Photoshop, select the color and delete it making it transparent and then save it out as a .png file.
You could also use an object fill using one our filters called chromaKey: https://docs.coronalabs.com/guide/graphics/effects.html#filter.chromakey
