I’d still like my Launch Image to be visible for a couple of seconds. Is the only way to do that to just make it a fade in scene and then fade out to the menu scene?

Yes, I would suggest you build this as a scene, transitioning out after a few seconds to the main scene. Although Apple (if you’re talking about iOS) lets you include various “launch images” (and actually requires one for iPhone5 compatibility), it’s not really intended to be used as a true intro/splash screen. Since your app loads quickly, you have the correct idea… make this a scene, show your company logo or anything you need to, and then transition out in a suitable time.
