If I wanted a App to offer a donation option, I understand In-app purchase is a no go. I believe I could use the PayPal plugin from the Gremlin Interactive Partner?
Would I also be correct that to use this plugin you must be a Corona Pro user, what I intend to purchase anyhow?

You can use the PayPal plugin with any Corona tier. The bad news is that apple do not allow you to use donations in your app, in any way shape or form.
The only thing they allow is a donate button which leads to an external website, which handles the donation from there.
PayPals main uses in apps are accepting noney for services or physical goods.

Apps that include the ability to make donations to recognized charitable organizations must be free
The collection of charitable donations must be done via a web site in Safari or an SMS
