Is it acceptable to downsize an image to the proper dimensions and use that as a screenshot image for an apple, kindle and Nook app ? (in case one doesn’t possess the exact mobile device).
How can anyone know the difference, as long as, the image looks identical to the actual device ?

I can’t imagine that would be a problem. You should be fine as long as the screenshot you’re providing is accurately representing what the game looks like, which is what your plan sounds like.
