When building for Kindle/Amazon version, is that version also compatible
with non-amazon android devices ?

what is the best practice, my ideal scenario is to compile just one
version for both kindle fire and non-amazon tablet and submit it
to the amazon app store.

I can’t definitively say yes, but I don’t see any reason why it would not. It’s still an Android build, but one without the Google propitiatory bits that Amazon did not license. Since Amazon sells their apps to regular Android people, this would have to work. Dunno about Nook builds. I know they also don’t have the Google bits, but I suspect there are some Nook specifics in their build.
