While you could drop back to a build from 2016 or so, my question is where are you planning on deploying your apps too?
If you plan to build iOS apps, you pretty much have to be using a very modern daily build of Corona because Apple, in particular after a new release of iOS and Xcode change their submission rules that pretty much forces you to use newer builds.
Even Google changed a rule recently that requires you to use a modern Corona daily build. You might be able to make macOS apps or deploy to Amazon using an older 10.10 compatible build.

We won’t be deploying any apps. My kids want to learn programming and we have an old Macbook that they can use.
