Good question. I ask myself why some games seem to do better than others.
I think for one, they’re angry! 
The game has a clear a focused goal and that’s to take revenge against the PIGS. You, as the player will vicariously help with their cause. The birds are so angry about what happened to them that they were willing to put their own life on the line.

Here are my thoughts as an quite experienced AB player.
The first thing I started love when I picked up the game were the sounds from these viscious little angry bastards. Add to this the awesome graphics you can easily see that this will take you in right away. And the gameplay was almost unique at the time. It is easy sometimes and very difficult too. Imho a perfect fit for the IOS platform. And after it got featured by Apple, it was pushing itself. No commercials required. Once you become visible in the top 20, a good game runs on its own.
Again, the whole package is awesome. Graphcis, SOUNDS, gameplay, presentation.

Operative word is “almost.” Crush the Castle brought the catapult gameplay to iPhone months earlier, which is just another practical example of how execution is more important than the idea, despite how everyone fetishizes coming up with ideas. @infuseddreams: no i meant it’s the perfect example of accessible, casual, slow-paced addictive gaming.
iPhone screen size isn’t really geared towards a frantic-paced joystick and double button combination for adults. it’s just not that comfortable. whereas the simplicity of Angry Birds means it’s really easy for anyone to pick up and play.
Plus the production values and the level design are good. And the characters have obviously been quite “marketable” if you look at the spin-offs it has generated.
